Hominy Salad

Here is a recipe I started making not too long ago. It makes a great side dish for Mexican food, and is a nice mayo-less dish for pot lucks.

Hominy Salad
2 cans hominy, drained and rinsed
2 cans black beans, drained and rinsed
1/2 to 1 whole red onion, diced
1 red pepper, diced
1 bunch cilantro, chopped
1/2 cup (or to taste) Newman's Own Lighten Up Light Lime Vinaigrette (Or you could just drizzle a little olive oil and the juice of 1-2 limes over it)
Salt and pepper to taste

Mix all ingredients.
